This is a "big picture" sort of post.&lt;br /&gt;&lt;br /&gt;Because of my (Andy's) work as an environmental consultant over the past several years, I have read lots of reports about climate change/global warming. One recent report was particularly striking and I felt morally compelled to pass it on and add my summary of the most important points. If you don't understand why some people are all concerned about the effects of "climate change" and "global warming" - or if you would like to understand better - then hopefully the information I have outlined below will help bring some clarity to the situation.&lt;br /&gt;&lt;br /&gt;The report linked to below was distributed by the UN Environment Programme, and it details the most recent updates to the scientific community's understanding of climate change and its impacts, collected over the last two years.&lt;br /&gt;&lt;br /&gt;Here is my summary of some of the key points laid out in the report:&lt;br /&gt;&lt;br /&gt;-- Even if the US commits to 73% GHG reductions from 2005 levels by 2050 (which it hasn't actually committed to) and the EU sticks to its 80% GHG reduction from 1990 levels by 2050 commitment, global average temperature is projected to rise 6.3 degrees F (that is a lot and is very bad).&lt;br /&gt;&lt;br /&gt;-- The growth in GHG emissions from energy production and industry has exceeded even the most fossil-fuel intensive (i.e. worst case) estimates developed by the IPCC at the end of the 1990s. Global GHG emissions were growing by 1.1% per year from 1990-1999. This accelerated to 3.5% per year from 2000-2007.&lt;br /&gt;&lt;br /&gt;-- Existing GHG emissions have &lt;strong&gt;&lt;em&gt;already &lt;/em&gt;&lt;/strong&gt;committed us to the following consequences: &lt;/p&gt;&lt;ul&gt;&lt;li&gt;Global average temperature rise of roughly 4.3 degrees F (that is if all human GHG emissions stopped in 2006, which obviously didn't happen). &lt;/li&gt;&lt;li&gt;Losses of mountain glaciers that supply fresh drinking water (as well as irrigation water and hydro power) to 20-25% of global population. &lt;/li&gt;&lt;li&gt;Sea level rise of 1 meter by the end of this century – 100 million people currently live within 1 meter of sea level (significant levels of infrastructure are located there as well - think "big port cities"). Additionally, areas near sea level will be exposed to higher risk of storm surges, flooding, and erosion. &lt;/li&gt;&lt;li&gt;Sea level rise of 5 to 10 meters during the following centuries – consequences similar to the 1 meter sea level rise, but worse. &lt;/li&gt;&lt;li&gt;Ocean acidification (from absorption of CO2 by the oceans and formation of carbonic acid) that will certainly damage and possibly destroy our coral reefs and the many species that inhabit or depend on them. &lt;/li&gt;&lt;li&gt;Shifts in Earth's precipitation cycle, with the basic result of "wet places get wetter" (i.e. more frequent, more intense storm/hurricane activity) and "dry places get drier" (i.e. more intense droughts). &lt;/li&gt;&lt;li&gt;Shifts in the precipitation cycle that will result in the disappearance of regional climates with associated ecosystem destruction and species extinction as drylands shift poleward. &lt;/li&gt;&lt;/ul&gt;&lt;p&gt;I know that sounds pretty terrible. But if we don't do anything, the consequences will only be worse. If you are wondering what you can do to help, here are three simple ideas:&lt;br /&gt;&lt;br /&gt;1) Call/email your senators and representatives (&lt;a href="http://www.usa.gov/Contact/Elected.shtml"&gt;http://www.usa.gov/Contact/Elected.shtml&lt;/a&gt;) and tell them you want strong and swift action on climate change, because the consequences we are already facing are very bad, and the consequences of doing nothing (or too little) are even worse. This is one of the most important things you can do. And don't take any "we're working on it" or "we're worried about the economy" or "we're worried about what other countries will do" or "we don't believe in climate change" types of responses. Be firm. (Don't be surprised if you hear some of those responses from both political parties.) [By the way, about the economy - the ecomomic effects of doing nothing will be *far worse* than the economic effects of acting now.]&lt;br /&gt;&lt;br /&gt;2) Use less energy. If you own a home, get an energy audit (many states and/or utilities have rebates so you can get them for free or reduced price - see &lt;a href="http://www.dsireusa.org/"&gt;http://www.dsireusa.org/&lt;/a&gt;), then take the auditor's recommendations (you will save money at the same time). If you don't own a home or don't get an energy audit, then consider: increase insulation, set thermostat higher in the summer (wear short sleeves inside and use less A/C) and lower in the winter (wear a sweater inside and use less heating), insulate your hot water heater, install CFLs, turn off lights, drive less (bike/walk more - you will be surprised how helpful it is for staying in shape and hooray for spending less money on gas!).&lt;br /&gt;&lt;br /&gt;3) Tell your friends. Tell your friends about the consequences we are facing regarding climate change, and give them some ideas on how they can make a difference. Feel free to forward this as an email or link to it from your blog/facebook page, if you'd like. Tell them what you are doing; not in a "I'm better than you way" but in a "hey this is a great idea and you should give it a try" way.&lt;br /&gt;&lt;br /&gt;To those of you who made it through this post, thanks. I don't know about you, but I find that to be astounding.  &lt;br /&gt;&lt;br /&gt;Eco friendly &lt;a href="http://www.factorydirectpromos.com/eco_5.html" title="reusable grocery bag"&gt;reusable grocery bags&lt;/a&gt; have seen their popularity surge in the past few years. They have a dramatically reduced environmental impact. So far this year over 325 billion disposable paper and plastic bags have been wasted and are piling up in landfills (and our oceans). Many countries across the globe are passing laws to tax or ban plastic bag usage and people are starting to act on the Earth's behalf. Together we can help save this planet with every bag we reuse. Seattle's bill for taxing plastic bags was just voted down, but it is just the beginning and a sign of change. However, the highlight of the event had to be the showing of "Who killed the Electric Car" which showed the sudden rise and just as sudden fall of the Electric Car EV1 that GM created in the 90's.  The movie does a great job showing how sustainable initiatives need more than just consumer support to succeed, citing the Federal Government, lobbying groups, and anti-capitalism as guilty members of those who killed the electric car.&lt;br /&gt;&lt;br /&gt;A panel discussion was held afterward and it looks like Say It Green! may be looking into building their own electric car soon as we talked to some local Utah business men and women that would be willing to help with the relatively simple conversion.&lt;br /&gt;&lt;br /&gt;Either way, I would highly recommend the film to anyone interested wanting to learn how the Electric car rose and crumbled in less then 10 years. When buying your next cotton t-shirt, buy organic and cut the carbon footprint of your purchase by over 15%.&lt;br /&gt;&lt;br /&gt;Say it Green! (www.sayitgreen.com), provider of organic, fair trade apparel custom printed with eco-friendly inks, has calculated that, all other things being equal, the carbon footprint of apparel made from organic cotton is 16% lower than that of apparel made from conventional cotton.  Organic cotton is grown pesticide free, lowering the carbon footprint of organic cotton apparel by not having to process and distribute the toxic pesticides used in farming conventional cotton.&lt;br /&gt;&lt;br /&gt;"The toxic pesticides used to grow conventional cotton contaminate our soil, water, air, and even remain in our food and clothing. We knew that, which is why we chose to offer clothing made exclusively from organic cotton. What we didn't know was that the manufacture and distribution of these pesticides leads to such a high level of greenhouse gases being emitted into our atmosphere," says Kira Dominguez-Hultgren, Say it Green! co-founder and Operational Manager.&lt;br /&gt;&lt;br /&gt;Carbon footprinting is one tool used to track the level of greenhouse gas (GHGs) emissions associated with a product or business. There is broad consensus that man-made greenhouse gases (GHGs) cause global climate change. The scientific community has indicated that global climate change is already occurring, making it imperative that we start reducing greenhouse gas emissions now.&lt;br /&gt;&lt;br /&gt;Eliminating our use of cotton pesticides is one easy way we can do this. Cotton pesticides are manufactured by big chemical companies and distributed to cotton farmers worldwide, and cotton requires a much higher pesticide level than the average crop. Even though it only makes up 5% of crop acreage in America, cotton crops account for 10% of all US farm pesticide use. In addition, worldwide cotton production accounts for 25% of all worldwide insecticide use (insecticides are a type of pesticide). Organic cotton does not require the use of these toxic pesticides.&lt;br /&gt;&lt;br /&gt;Just how toxic are these pesticides? According to a 2001 EPA study, the EPA considers seven of the top fifteen cotton pesticides used in the US to be "possible," "likely," "probable," or "known" human cancer-causing chemicals.&lt;br /&gt;&lt;br /&gt;The research for this study was done by Andy Hultgren, co-founder of Say it Green! and Kira's husband. Andy currently works for the sustainability consultancy Environmental Performance Group and is the company's technical expert in carbon footprinting. Andy has conducted numerous carbon footprint studies for a wide range of businesses and government organizations, and has served on a technical expert panel for The Climate Registry, North America's leading provider of carbon footprint standards and data reporting.&lt;br /&gt;&lt;br /&gt;"This carbon footprint study was actually quite limited in the potential GHG-reduction benefits of organic cotton that were considered," says Hultgren. "For example, organic cotton farmers use environmentally friendly fertilizers, often from very local sources. That means they are often not buying their fertilizers from big chemical companies, who produce them in factories and have them shipped all over the world. And organic cotton farmers typically use better soil management practices, leading to increased soil health and potentially less need for GHG emitting farmland expansion. So really, the potential GHG reducing benefits of organic cotton could be much higher than the 16% we calculated as resulting solely from the elimination of toxic pesticides. "For example, the fertilizers used by conventional cotton growers typically run off into our water ways, contaminating them and contributing to massive algae growths that kill off other aquatic plant and animal species. And as for our carbon footprint study, it really was a limited study of the potential GHG reduction benefits of organic cotton."&lt;br /&gt;&lt;br /&gt;According to records held by the California Department of Pesticide Regulation, in 1999 a work crew started work in a cotton field five hours after it has been treated with pesticides. I like to double the recipe.&lt;br /&gt;&lt;br /&gt;Note: Vegan options&lt;br /&gt;&lt;br /&gt;1 1/4 cups flour (I mix whole wheat and pastry flours)&lt;br /&gt;1/2 TSP baking soda&lt;br /&gt;1 cup packed brown sugar (I use evaporated cane juice which works just fine)&lt;br /&gt;3/4 cup margarine (we use Earth Balance)&lt;br /&gt;Egg Replacer - 2 eggs worth&lt;br /&gt;1 TSP vanilla&lt;br /&gt;2 1/2 cups rolled oats, uncooked&lt;br /&gt;6 oz. semi sweet chocolate chips (use carob chips to make these cookies vegan)&lt;br /&gt;1/2 cup chopped walnuts (I like to skip the walnuts but Kira likes them)&lt;br /&gt;&lt;br /&gt;In a small bowl, combine flour, baking soda, and salt; mix well. At the same time, prepare your egg replacer. In a large bowl, beat together sugar and margarine until light and fluffy. Blend in egg replacer and vanilla. Add flour mixture; mix well. Stir in oats, then add chocolate chips and walnuts.&lt;br /&gt;&lt;br /&gt;Drop dough by rounded tablespoonfuls onto greased cookie sheets (grease with olive oil). Bake for 10 to 12 minutes at 350 degrees. Whether you call it "V-Day", "Singles Awareness Day" or something else, it's hard to avoid the commotion surrounding Valentine's Day.  So in honor of February 14th, here are some very interestingly funny facts about the holiday that you may not have known:&lt;br /&gt;&lt;br /&gt;- St. Valentine's Day was first made an official holiday in England and by none other than the King of Romance himself, Henry the XIII.  Forget the issues with bearing male heirs, you know wives one through six probably forgot to get him a card on V-day.&lt;br /&gt;&lt;br /&gt;- National survey's suggest that up to 64% of men do not make plans in advance for a romantic Valentine's Day with their sweetheart.  Now, Say It Green's printers can print pretty quickly, but not THAT quickly...give us a couple days warning at least.&lt;br /&gt;&lt;br /&gt;- Roughly 1 BILLION (evil finger to the side of the mouth expression here) Valentine's Day cards will be exchanged.  Also, about 300 million "Maybe's" and 500 million "NO's" will be checked in response to the question "Will you go out with me? :)" &lt;br /&gt;&lt;br /&gt;- While men may not be too good at planning ahead, roughly 15% of women will see it coming and will order themselves flowers to be delivered on...you guessed, February 14th.&lt;br /&gt;&lt;br /&gt;- During the 1800's, a drop in postage rates and an increase in "obscene" Valentine's day cards lead to Chicago's post office rejecting more than 25,000 cards on the grounds that they "were too indecent and were not fit to be carried through the U.S. Mail".  While direct correlations are hard to substantiate, it is widely believed that the lack of love showed by the Chicago Post Office is what most likely lead to Chicago becoming a hot bed for Mobs in the 1920's &amp; 30's.&lt;br /&gt;&lt;br /&gt;- And lastly, if you think you've got the best Valentine's Day gift, read this first and consider:  The Taj Mahal in India, built under Emperor Shahjahan as a memorial to his wife and stands as the emblem of the eternal love story.  It also took 22 years and approximately 20,00 Laborers. Can also be served with pita bread.&lt;br /&gt;&lt;br /&gt;Sautee garlic and onions in olive oil over medium heat, stirring occasionally for ~4 min. We like to do this in a 2 gallon pot and just add everything else to it as we go.&lt;br /&gt;&lt;br /&gt;Stir in lentils, cumin, salt, spinach, and carrots. Add water and bring to boil. Reduce heat and simmer for 1 hour, stirring occasionally. About 10 min before soup is done, add more cumin or salt to taste.&lt;br /&gt;&lt;br /&gt;If you want it spicy, add Patak curry paste and/or Tabasco sauce. It costs the planet a lot to produce. In an article from April 2008 in the American Chemical Society Journal, "Food-Miles and the Relative Climate Impacts of Food Choices in the United States," the research shows that red meat produces 150% more greenhouse gas emissions than chicken or fish. "Shifting less than one day per week’s worth of calories from red meat and dairy products to chicken, fish, eggs, or a vegetable-based diet achieves more greenhouse gas reduction than buying all locally sourced food." Bring bulgar wheat and 3 cups water to a boil, reduce heat and simmer for about 15 minutes until water is absorbed.&lt;br /&gt;&lt;br /&gt;Chop onions, garlic, carrots, and celery.&lt;br /&gt;&lt;br /&gt;In a very large bowl mix cooked lentils, bulgar wheat, oats, cashews, chopped veggies, and cranberry sauce. Add spices to taste. You want to be able to make this into a loaf so now start adding the wheat germ, ground flax, cream of spelt until mixture looks thick enough to hold its shape.&lt;br /&gt;&lt;br /&gt;Oil 2-3 baking dishes and divide mixture between them. Form into loaves.&lt;br /&gt;&lt;br /&gt;Bake at 375 for 30-40 minutes depending on your oven and loaf size.&lt;br /&gt;&lt;br /&gt;Serves 12&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Notes:&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Use whatever grains, flours, or nuts you have in your cupboards to substitute for the bulgur wheat, cashews, wheat germ, ground flax, and cream of spelt.&lt;br /&gt;&lt;br /&gt;Add more or different veggies. Bell peppers work great.&lt;br /&gt;&lt;br /&gt;Wrap in filo dough for a crispy twist! Take loaves out of the oven 10 minutes early and wrap in about 4-5 filo sheets with generous amounts of olive oil between sheets and on loaf. The old man sheriff in the Coen Brothers latest movie, “No Country for Old Men,” faces this question of helplessness along with the audience: will you fight the evil or are you complicit in it? The killer in the movie is determined, maniacal in his determination to kill, without apology and in fact with witticism. Are we prepared to fight with equal determination for good, for peace? Can we wage maniacal peace? Recognizing that evil is not just the killer who holds the air gun to people’s foreheads but the killer that holds the air gun to the cow’s head, that forces children and adults to work to death for wages that are immoral, that sends unwitting kids to war for oil? Simply put, are we willing to change our own lives? To limit our consumption because we have to when we only buy things that are ethically made, sustainably grown, and owned by the workers rather than by corporate businesses? I know of two businesses that encourage a pro-stewardship model of business, where instead of charging prices they hope that through educating their customers about the real cost of their products, their customers will give them what they think is fair for that item. So far, these businesses have thrived with customers that now have a vision for their life that is so much greater than just being a consumer.&lt;br /&gt;&lt;br /&gt;This is a scary proposition for most businesses to even consider. You are putting yourself at the mercy of the consumer. Are people willing to pay fairly if not forced to? Are people willing to take the extra time to consider how much a product is worth? Our economy is based on lifestyle &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;convenience&lt;/span&gt; - what's cheapest, what's fastest - in the short-term. This assumed lack of consideration on the part of the consumer is probably the most destructive element in our economy. It causes people to be a slave to material things in their life without considering what more it's costing them than the price tag. For instance, are they considering the pollution they or children will have to live with because of their purchase? Are they considering the cost of time they will have to spend away from family, working in a cubicle, or in their car because of this purchase? Are they considering what it cost the people they will never meet to make the product they are about to consume?&lt;br /&gt;&lt;br /&gt;Ironically for a country based on a democratic government and rugged individualism, American &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;capitalism&lt;/span&gt; begins to sound a lot like 1984, an oppressive regime sedating the thoughtless masses. So the question is, how is Say it Green! or any business with similar ideals going to be different?
